If my coolant reservoir is low can I just add coolant to get back to full or do I have to change the old and put it new?

You can put new in with the old technically as long as you stick with the same type of coolant. However, where you need to start is finding out where the coolant leaked from. Coolant doesn’t “burn off” like oil can, you likely have a leak somewhere. Start by checking your coolant hoses, especially around the clamps. Those are the typical offenders, its rather common unfortunately. Good luck, keep us posted

Someone correct me if I'm wrong.

It looks like on the Fuel injected bikes the reservoir is nothing more than an overflow if the bike over heats, the coolant does not have a path from the white tank back into the radiator.

You need to actually check your fluid level at the radiator cap.
